Resilient Pieholes
In summer 2020, Jai Dulani and I hung out in my yard talking about doing something new for Bellingham Review. We sat properly distanced in cattywampus chairs fronting an old stand of raspberry canes, and possibly we were hungry. We wanted something that would be an ongoing feature on our website: current, trenchant, tasty, and maybe, like the news, sometimes a little desperate. We came up with Resilient Pieholes (the genius name is Dulani’s); food is sustenance, comfort, ancestors, family, memory, intimate. Resilient Pieholes chronicles what dishes we’re making during Covid and why. Our authors—Quincy Scott Jones, Chaya Babu, Stacie Evans, Ana-Maurine Lara—gift us with recipes, and meditations on how the needs, nourishments, financial distress, and limited ingredients of this time look on our various tables. We’ll be adding to this section as we go. It’s a difficult world. When do we stop holding our breaths? When we eat.
